Introduction

Quick and tasty Low carb main meal you can have alone, with rice, or noodles. Quick and tasty Low carb main meal you can have alone, with rice, or noodles.
Number of Servings: 10

Ingredients

    32 oz of low sodium V8
    32 oz can of diced tomatos
    1/2 cup salsa
    1 cup shredded carrots
    1 medium zucchini
    2 stalks celery
    1/4 yellow pepper
    5 chicken quarter pieces(approximately 2lbs)

Directions

Chop all veggies
Add all ingredients to pot.
Crockpot;
Cook on high for 2 hours then low until done (4-8 hours.)
Stove:
Boil until chicken is falling off bone and veggies are soft.

Each serving has 2-3 oz chicken and 1.5 cups of veggie sauce.
