Pumpkin Fritters

Ingredients

    3 egg whites
    1/2 cup splenda
    1/2 tsp salt
    1 1/2 cups canned pumpkin
    1 cup whole wheat flour
    1/4 tsp baking soda
    2 tsp pumpkin pie spice
    1/2 tsp ground ginger
    1 Tbsp. melted land o lakes light butter with canola oil
    1 tsp vanilla extract
    1 Tbsp confectioners sugar
    nonstick cooking spray

Directions

1. Beat eggs, splenda, and salt until light and fluffy. Blend in pumpkin.
2. Sift flour, baking powder and baking soda together.
3. Beat into egg mixture. Add spices, butter, and the vanilla. Mix well.
4. Drop into a hot pan sprayed with nonstick cooking spray (3 at a time, it makes 6). Watch carefully because they scorch easily.
5. Sprinkle with confectioners sugar.
