Mushroom Spinach RisottoSubmitted by: SOMMERSJ
1 cup of aborio rice
500 ml salt reduced chicken stock
1 chicken breast skin off (275grams)
200 grams of mushrooms - sliced or chopped
175 grams of spinach
1 large onion - shopped
2 garlic cloves - crushed
1 tbls spoon olive oil
In a large pan add oil, onion and garlic and cook until soft.
Add 1 cup of aborio rice and cook until opaque. Do not stir just use the handle of the pan and move it back and forward.
Once risotto is opaque start adding the chicken stock slowly, again try not to stir the rice.
Once rice is nearly cooked add mushrooms and chopped chicken pieces. Once the mushrooms are cooked add the spinach and stir until it has wilted.
You can add some parmesan cheese (not included in the calorie count).
