Chicken and Rice

Number of Servings: 4

Ingredients

    2 c uncooked rice
    3.5 c trader Joe's low Sodium Chicken Broth
    1 Bunch asparagus (about 6 oz)
    3/4 Lb chicken breast, skinnless and boneless (uncooked)
    3/4 c minced onions
    Salt
    Pepper
    1/2 to 1 t Tumeric

Directions

Makes about 4 - 2 cup servings

1. chop chicken and asparagus into bite sized pieces (keep seperate)
2. place rice, broth, chicken, timeric, onion, salt and pepper into a saute pan (allow for rice expansion)
3. cook on high until the rice is boiling, then decrease temperature to low, cover
4. after about 10 minutes, when the rice is just starting to get tender, add asparagus
5. recover and finish cooking for another 5 min.
6. Serve and enjoy!

(if using frozen chicken follow these directions, if not, place chicken into the mix after about 5 min cooking)
