IntroductionQuinoa is is an ancient grain, light in texture with a nutty flavour. Quinoa is is an ancient grain, light in texture with a nutty flavour.
1 cup quinoa, rinsed
1 3/4 water
1/2 cup cucumber
4 finely diced green onion
1/4 cup cilantro or parsley
1/3 cup corn niblets
3 tbsp lime juice
2 tbsp olive oil
1 tbsp toasted sesame oil
1 tsp honey(optional)
salt and pepper to taste
Bring water to a boil and add quinoa.
Reduce heat and simmer covered 15 minutes, stirring occasionally until grain is tender.
Remove from heat and cool uncovered.
Toss cucumber,onion, cilantro and corn with cooled quinoa
Combine lime juice, olive oil, toasted sesame oil and rice syrup or honey and add dressing to quinoa. Stir to coat grain and vegetables.
