Nana's Lentil soup

Introduction

I grew up on this soup and it never gets old for me - I love soup so this is a great one for winter I grew up on this soup and it never gets old for me - I love soup so this is a great one for winter
Number of Servings: 16

Ingredients

    1 bag of dried lentils (approx. 2 cups)
    1 bag of Healthy Harvest Wide Noodles
    1 large yellow onion chopped
    6-10 cups of water
    2-3 cups og chicken (or veg.) broth
    1-2 tbs olive oil
    Salt & Pepper to taste

Directions

Makes 10-12 1 cup servings

Saute onion in 1-2 tbs of olive oil

Bring water to boil add lentils, cook until al dente (to the tooth) add the saute onion and salt and pepper and chicken or veg. broth - continue to boil, when lentils are soft, add the noodles, turn heat to low and let simmer until noodles are cooked.
