Introduction

Number of Servings: 8

Ingredients

    1 large can crushed or stewed tomatoes (about 3.5 cups)
    1/4 cup tomato paste
    2 tbsp dried parsley
    1 clove garlic, crushed
    1 tsp each dried oregano & dried basil
    1/2 tsp each salt & pepper
    2 tbsp olive oil
    1/2 cup finely chopped onions
    2 oz (1/4 cup) white or red wine

Directions

In a blender, puree tomatoes with tomato paste, parsley, garlic and spices. Set aside.

In a nonstick pan, sautee onion in olive oil until tender and starting to brown. Add the white wine and scrape up any brown bits from the pan with a wooden spoon. Add the tomato puree and simmer on low for about 30 minutes. Serve over your favourite pasta.
