Introduction

Simple and fast, a berry pie to fill the void that fattening snack pies left. Its got the same type of thick, jelly berry filling -but you control the sugar! Substitution options are available. Little baking, or no bake at all. It is vegan unless you choose to add light whipped topping. Topping calores not included. Ingredients

    1 cup of frozen blueberries

    2 cups of frozen strawberries

    .25 cup splenda or sucralose
    (or equivalent of .25 cup of sugar sweetener in your favorite substitute)

    6 keebler mini graham cracker crusts

    .25 cup corm starch

    1.5 cups of water

    2 table spoons of lime juice (or to taste)

    (you may add any fruit, even apples and cinnamon! Just adjust your calories in your own recipe for counting!)

Directions

Prepare a mixture of 1 cup of water and 1/4 cup of corn starch, set aside. If you would like your pie filling to be lesst hick (because this is for a stand up recipe) then reduce the corn starch to as little asy 3 table spoons, thats what I would try... If you like, brown pre-made graham cracker mini pie crusts in oven, 375 degrees to your liking. No baking neccesary. Picture shows baked crsut.

Add berries into pot with 1/2 cup of water (.5 cup). There will be extra water from berries. On High heat, cook down into a semi-liquid state, with some solid material berries left. Approx 15 minutes (or less depending on your taste). For the last 15 minutes add a mixture of 1/4 cup (.25 cup) corn starch and 1 cup of water in to the pan of berries. Reduce heat, simmer until mixture becomes clear (about 5 mins). Add lime juice after the five minutes and mix into berry mixture. Lime juice helps it stay tart after corn starch- even with apple filling. Remove from heat, stir well. It should become clear before spponed into pie crusts. Spoon approx .25 cup + 1 tabble spoon into each crust (or make even servings by eye).
Can be topped with a serving of light or fat free whipped topping (calories not included in this recipe).
