Juli's Chicken Soup

Introduction

This is the soup I make and freeze for when someone feels under the weather or just needs a little comfort food. This is the soup I make and freeze for when someone feels under the weather or just needs a little comfort food.
Number of Servings: 6

Ingredients

    2 Ck breasts (I like using IQF)
    2 tsp olive or vegetable oil
    2 cans low sodium ck broth
    One medium onion
    1 tb minced garlic (You can buy bottled minced garlic in the produce section )
    2 carrots cut into ¼ inch rounds
    2 stalks celery
    Egg noodles (1 – 1 ½ cups eyeball it)

Directions

Finely dice the onion and put into a Dutch oven with the olive oil. Microwave the ck if frozen for two minutes cut into ½ inch chunks and add to the onions. Cook on medium high until pink disappears and onion softens. Add garlic, carrots and celery. Continue cooking until carrots are crisp tender (about 2-3) minutes. Add broth and turn heat to high. Add 1 to 1 ½ cups of noodles depending on preference. Boil until noodles are tender (It doesn’t take very long). Season with salt and pepper to taste. This recipe freezes well. Serves 6 generously
