Juli's Chicken Soup

Introduction

This is the soup I make and freeze for when someone feels under the weather or just needs a little comfort food. This is the soup I make and freeze for when someone feels under the weather or just needs a little comfort food.
Number of Servings: 6

Ingredients

    2 Ck breasts (I like using IQF)
    2 tsp olive or vegetable oil
    2 cans low sodium ck broth
    One medium onion
    1 tb minced garlic (You can buy bottled minced garlic in the produce section )
    2 carrots cut into inch rounds
    2 stalks celery
    Egg noodles (1 1 cups eyeball it)

Directions

Finely dice the onion and put into a Dutch oven with the olive oil. Microwave the ck if frozen for two minutes cut into inch chunks and add to the onions. Cook on medium high until pink disappears and onion softens. Add garlic, carrots and celery. Continue cooking until carrots are crisp tender (about 2-3) minutes. Add broth and turn heat to high. Add 1 to 1 cups of noodles depending on preference. Boil until noodles are tender (It doesnt take very long). Season with salt and pepper to taste. This recipe freezes well. Serves 6 generously
