Southwestern Squash

Ingredients

    2 Lbs acorn squash
    2 Tbsp Roasted red pepper hummus
    1 Tbsp honey
    1 tsp cumin
    1/4 tsp red pepper
    1 Tbsp parmesan cheese

Directions

Preheat oven to 400. Line baking sheet with foil sprayed with olive oil spray. Cut squash in half, discard the seeds and place the squash cut side down on the foil. Bake 35-45 minutes. leave oven on.

Remove squash and let cool. Scoop out flesh and place in a medium bowl. Discard the skin.

Add the hummus, honey, cumin, salt, and red pepper to squash in the bowl; mix well. Spread the mixture into the baking dish. Sprinkle with cheese. Bake until the squash is heated through and the cheese is lightly browned.
