World's best lasagna!!

Introduction

I've had a lot of lasagnas but this one tops them ALL!! It is THE BEST!! I've had a lot of lasagnas but this one tops them ALL!! It is THE BEST!!
Number of Servings: 12

Ingredients

    6 oz. Leanest ground beef (96% lean was used for calculating the nutrition facts.)
    1/2 medium onion (diced)
    1 clove garlic
    1 Tb. Basil
    3/4 tsp. Salt
    pepper to taste
    Italian seasoning to taste
    1- 15.5 oz. can of diced tomatoes, I like to use the italian kind that are preseasoned (or 2 cups fresh.)
    1- 6 oz. can of Tomatoe paste
    1 1/2 cups ricotta cheese (part skim)
    1 1/2 cups cottage cheese (I used 4% milkfat, but you could lower the calories and fat by using skim.)
    1/2 cup parmesan cheese
    2 Tbs. Parsley
    2 eggs (beaten)
    1/2 tsp. Pepper
    8 lasagna noodles
    1 pound grated mozzarella cheese (part skim)



Directions

Soak noodles in cool water until soft enough to manipulate.

Brown beef with onion until the onion is clear and the beef is done. Add basil, salt, pepper, tomatoes and tomatoe paste, let simmer for 20 min.

Mix together (in a separate bowl) the ricotta, cottage cheese, parmesan, eggs, and parsley.

In a 9x13 pan layer as follows:
1. layer of noodles
2. layer of cheese mixture
3. layer of mozzarella
4. layer of meat/ tomatoe sauce

Repeat until you reach the top of the pan, top with more mozzarella. I like to sprinkle a little parmesan on top for better presentation. (and italian seasoning.)

Bake at 375 for about 20-30 minutes. Let set for a few minutes before serving.
