3/4 cup white beans
2 pkgs chicken bouillon
1 large potato (chopped)
6 - 8 baby carrots (chopped)
2 tbsp olive oil
1/4 cup chopped onions
3 cups water
2 cloves garlic (minced) optional
Place olive oil in pan, add finely chopped onion, carrots and garlic (optional) and saute until onion become transparent.
Add water, bouillon and potatoes and cook over medium heat for approx 5 minutes. Add spices
Take a tablespoon or so of beans and puree in blender. Add this and cooked beans to the potato and carrots. Cook slowly for 10 minutes or until potatoes and carrots are cooked.
