Deborah's Caribbean Beef Curry

Introduction

This is a Trini inspired curry that I love to make...the hotter the better! This is a Trini inspired curry that I love to make...the hotter the better!
Number of Servings: 4

Ingredients

    2 Tbsp canola oil
    3 Tbsp curry powder, I use Chief [a Trinidadian curry powder]
    1 Tbsp chopped garlic
    1 cup chopped onion
    2 tsp fresh thyme
    1 jalapeno pepper [I use 1 scotch bonnet or habenero]
    1 tsp black pepper
    1 Lb lean beef, round steak, cubed into 1-11/2 inches
    2 cups diced potato
    1 cup chopped carrots
    2 cups of water

Directions

Makes 4 servings, approximately 2 cups each

In a large pot, heat the oil then add the spices, cook until curry browns a bit, but be careful not to burn it.

Add the garlic, onion and pepper. Cook until softened.

Add the beef and cook, stirring often to to coat the meat and let it brown.

Add the vegetables and stir to coat with spices.

Add the water, more or less may be needed in total.

Simmer for at least 1 hour.
