Spinach and Cheese Stuffed Chicken

Introduction

I use a combination of light cheeses and vegetables to stuff chicken breast. You can bread the chicken if you like, but it is good without the breading. Number of Servings: 4

Ingredients

    Chicken Breast, no skin, 16 ounces (split and sliced thin)
    Spinach, frozen, 1 package (10 oz) yields
    Onions, raw, 1 cup, chopped
    Garlic, 3 cloves
    Olive Oil, 1 tbsp
    *Ricotta cheese, fat-free, 4 oz
    *Kraft Mozzarella Finely shredded Part Skim cheese, 0.25 cup
    Parmesan Cheese, grated, 2 tbsp
    Tomato Sauce, 1 cup (optional)
    Bread, whole wheat (including toast), 2 slice (or you can use readymade bread crumbs)
    *Italian Herb Seasoning - McCormick, 2 tsp

Directions

1. Dry or toast bread. Place in a food processor with 1 tsp of Italian seasonings.
2. Preheat oven to 350.
3. Split the chicken breast and slice each in half lengthwise. Pound chicken flat.
4. Defrost and squeeze moisture out of spinach.
5. Sautee onions and garlic in pan until soft. Add spinach and salt and pepper to taste. Cool mixture.
6. Combine cheeses (reserving a table spoon of mozzarella and parmesan) and remaining Italian seasonings in a bowl. Fold in half the spinach mixture.
7. Spread remaining mixture into the bottom of a glass casserole dish sprayed with cooking spray (and sauce if desired).
8. Spoon about a tablespoon of cheese mixture into each chicken breat and place on top of spinach mixture in casserole dish.
9. Mix bread crumbs with reaming oil and cheese. Sprinkle on top of rolls. Secure with toothpick if needed.
10. Bake at 350 for 30 minutes,

Makes 4 servings (one to two pieces each, depending on how many thin slices of chicken made.)
It is good served with brown rice or spaghetti squash.
