2 tbl EVOO (extra virgin olive oil)
1 onion finely chopped
1 carrot finely chopped
1 celery stalk finely chopped
1 lb very ripe tomato's choped
2 tsp sugar
1/2 cup water
1lb whole wheat pasta
2) add tomato to the vegetables with the parsely , sugar and a 1/2 cup water. Bring to boil, reduce heat to low and simmer for 45 minutes, stirring occasionally.
3) cook pasta according to box directions or al dente if you like. Then toss the tomato mixture with the pasta and serve. Salt and pepper to taste.
