Abs Diet Chili (modified)

Introduction

Has a great kick with a touch of sweetness from the cinnamon. Hearty, and filling. Has a great kick with a touch of sweetness from the cinnamon. Hearty, and filling.

Ingredients

    2 cans kidney beans, drained and rinsed
    1 10-oz can Ro-Tel mild diced tomatoes & green chilies
    1 lb chicken, diced to bite size
    1 small onion, finely diced
    1 red bell pepper, diced
    1 tsp olive oil
    1/4 tsp cumin
    1/4 tsp salt
    1/8 tsp cayenne
    1/8 tsp cinnamon

Directions

Heat olive oil over medium to medium-high heat. Add diced onion and bell pepper, saute for about 5 minutes. Add diced chicken. Cook for about 10 more minutes. Add remaining ingredients, turn heat down to allow chili to simmer. Cover and simmer about 20 minutes. Serve over brown rice with a little shredded cheddar cheese if desired.
