Southern Living Calico Cheese Soup

Ingredients

    1 cup finely chopped carrot
    1 cup finely chopped green pepper
    1 cup finely chopped sweet red pepper
    1 cup finely chopped celery
    2 tablespoons minced onion
    1/4 cup butter, melted
    3 tablespoons all purpose flour
    2 cups 1/2% milk
    2 cups low sodium chicken broth
    2 cups (8 ounces) shredded low fat sharp Cheddar cheese
    salt and pepper to taste
    1/2 cup (2 ounces) finely shredded low fat sharp Cheddar cheese
    seasoned croutons, optional and not included in nutrition

Directions

Combine first 4 ingredients in a medium saucepan; add water to cover. Bring to a boil; reduce heat, cover and simmer 3 to 5 minutes or until vegetables are tender. Drain and set aside.
Saute onion in butter in a large saucepan over medium heat until tender. Reduce heat to low; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Combine milk and broth; gradually add to flour mixture. Cook over medium heat, stirring constantly, until mixture is slightly thickened. Stir in 2 cups shredded cheese; cook, stirring constantly, until cheese melts. Add reserved vegetables and salt and pepper to taste. Cook until thoroughly heated.
Ladle soup into serving bowls. Garnish each serving with croutons and finely shredded cheese. Yield: 7 cups/1 cup serving.
