Southwestern Quinoa

Ingredients

    1 cup quinoa, rinsed and drained
    2 cups water
    1/2 cup chopped baby carrots
    1 shallot, minced
    3 cloves garlic, minced
    1/2 red onion, chopped
    red, green, and yellow bell peppers, chopped (~2 cups)
    1 jalapeno pepper, seeded, ribbed and finely chopped
    2 Tbsp olive oil
    2 Tbsp red wine vinegar
    1 oz lime juice

Directions

cook quinoa in water according to package directions. Add chopped carrot pieces after 5 minutes of cooking along with fajita seasoning, cumin, cilantro, and oregano, to taste.

in preheated skillet add olive oil. Sautee shallot and garlic for 1 minute. Add onion and peppers. Cook an additional 2 mintues. Add jalapeno, cook 1 minute. Remove from heat.

Combine cooked veggies and quinoa in a large bowl. toss in red wine vinegar and lime juice. Add fajita seasonong, salt, pepper, garlic powder, cilantro, oregano, and cumin to taste.

Serve warm with shredded cheese.
