Ingredients

    1 cup mint
    5 cups parsley
    1 cup bulghur wheat (soaked in warm water for at least 2 hours)
    4 tsp extra-virgin olive oil
    4 medium tomatoes, finely chopped
    salt and pepper to taste

    1 serving = 1 oz = 1/8 cup = 2 heaping tbs

Directions

Chop each ingredient finely and mix together in a large bowl. Add lemon, oil and salt. Mix again and refrigerate for at least 1 hour to allow the ingredients to marinate together.
