SevenAcreSky Garden Red Pepper Dip

Introduction

A tasty sweet-red-pepper dip (it's not "sweet") made with fresh, roasted, or canned sweet red peppers good on chips, veggies, or spread on crackers or sandwiches. Ingredients

    1 cup nonfat plain yogurt
    1 tsp fresh ground black pepper
    1 tbsp minced dried garlic
    1 tsp sea salt
    2 tbsp extra virgin olive oil

Directions

With FRESH red peppers - seed two small red peppers and cut into 1-inch chunks. Place in microwave and cook till softened. (Peel and discard any pepper skins that are loosened with heating.)
With CANNED or ROASTED red peppers - take three halves from a jar or can, or if halves are small four halves. Pepper amount can vary, but aim at using about 2/3 cup peppers.
Place peppers, yogurt, black pepper, garlic, and seasalt into blender (or a large cup if you use a hand blender). Blend till peppers are finely mixed with mixture, about 1 to 1 1/2 minutes. Add olive oil, blend again 30 seconds.
Serve with light chips, lowfat crackers, or veggies. Also great as a spread on sandwiches.
Makes 6 servings (1/4 cup each)
