Sprouted Quinoa tabouleh

Ingredients

    1 cup dry quinoa
    3 tbsp olive oil
    1/4 c fresh lemon juice
    1 clove garlic chopped
    1 cup chopped cucumber
    1 c chopped tomato
    1/2 cup fresh parsley chopped
    1/2 c fresh mint chopped
    Salt

Directions

Makes about 5 1 c servings

Soak quinoa overnight in cold water. Drain and cook In about 1 cup water until tender. Cool and mix all other ingredients together. Serve cool.
