Chicken Shish Kabobs

Introduction

serve with a side salad or rice serve with a side salad or rice

Ingredients

    2 Chicken Breasts - Boneless/Skinless (Cut into Cubes)
    2 Carrots - Sliced (about a 1/4 inch)
    1 Red Onion - cut (1 inch Squares)
    1 Yellow Pepper - Cubed
    1 tbsp Dried Oregano
    1 tbsp Garlic Powder
    2 tbsp Extra Virgin Olive Oil
    1 tbsp Lemon Juice
    1 Package Bamboo Skewers

Directions

-soak skewers in warm water so they do not burn

-mix all ingredients together and thouroughly coat everything

-marinate for atleast 20 mins

-take skewers out of water and set aside. take chicken and vegies and start asembling your kabobs, don't squish everything together too tightly on your skewers as they wont cook thoughly.

-on a BBQ or skillet (a George Forman grill will work too) cook on medium heat on all sides until chicken is cooked through

-Enjoy!
