5 corn tortillas
1/3 cup diced onion
1/3 cup diced bell pepper
1 (16 oz) can black beans, drained and rinsed
1 cup frozen whole kernel corn, thawed
3/4 cup salsa
1 1/2 tsp chili powder
1/2 tsp dried oregano
1/2 tsp ground cumin
1/4 tsp salt
1/8 tsp ground black pepper
2. coat tortillas with cooking spray; place on a baking sheet. bake at 350 for 10 minutes or until crisp, turning after 7 minutes.
3. while tortillas bake, saute onion and bell pepper for 4 minutes in a large skillet heated to medium-high heat. stir in beans and next seven ingredients. cook for 2 minutes.
4. place tortillas on plates and top each one with abotu 1/2 cup of bean mixture.
