Sandy's Gumbo

Ingredients

    1/3 C flour
    1/4 C canola oil
    1 medium onion, chopped
    4 medium stalks celery, chopped
    1 jalapeno pepper, chopped
    5 cloves garlic, pressed
    1/4 t black pepper
    1/4 t cayenne pepper
    4 C fit and active chicken broth
    4 C water
    8 oz smoked sausage, cut down the middle and sliced
    4 boneless, skinless chicken thighs, cut in 1/2" pieces
    2 bay leaves
    16 oz shrimp, peeled and deveined
    1/8 cup cornstarch dissolved in water

Directions

Make a roux by combining flour and oil in large stock pot til smooth. Cook over med-high heat for 5 minutes, stirring constantly. Reduce heat to medium. Continue cooking 10-15 minutes more until roux turns a reddish brown.

Stir in onion, celery, jalapeno, black pepper and cayenne pepper. Cook over medium heat 1-2 minutes until veggies are slightly tender.

Slowly pour in hot chicken broth, sausage, chicken and bay leaves. Bring to a boil. Reduce heat. Cover and simmer 20-25 minutes or until chicken is cooked through. Add shrimp and continue cooking until pink. Add dissolved cornstarch if not "thick" enough for your taste. Serve with rice and okra (not included in nurtritional facts to allow for different kinds of rice). I've left the okra out, because my husband doesn't like it, so I add frozen okra at the table. It cools down the gumbo and doesn't get all slimy this way. Enjoy!
