Basic Roast Butternut

Introduction

A low-calorie sweet and smooth carb! A low-calorie sweet and smooth carb!
Number of Servings: 4

Ingredients

    6 C butternut squash, in 1/2" dice
    EVOO spray
    seasonings to taste:
    *salt
    *pepper
    *garlic powder
    *onion powder

Directions

Heat oven to 400

Peel and dice a large butternut squash (6 cups total)

Line a rimmed baking sheet with foil and spray with oil. Pour squash cubes onto sheet and spray with oil. Season to your liking with seasonings.

Roast butternut squash for about an hour, tossing every 20 minutes, or until tender and brown.
