Bring 2 cups Chicken Broth and 1 cup of Quinoa to a vigorous boil. Reduce heat and simmer for about 15 minutes. While Quinoa is cooking. Saute chopped vegetables in olive oil, when veggies cooked add cranberries. When Quinoa is cooked add it to the veggie mixture and stir well. Add balsamic vinegar, you can add more or less depending on your preference.
