A quick and easy dinner consisting of brown rice and broccoli-beef stir-fried. The sesame oil gives it that "Chinese restaurant" flavor, but you could omit it or use a different type of oil if you want. Ingredients

1 cup brown rice, uncooked
1 lb. sirloin
2 TBS sesame oil
1 clove garlic
1 can Chinese vegetables (e.g. La Choy)
2 cups chopped broccoli
1 tsp ground ginger
Reduced sodium soy sauce
Directions
1. Prepare brown rice: Boil together 2 cups water, 1 cup uncooked brown rice, and 1 tablespoon sesame oil. Adding salt is optional. Reduce heat, cover and simmer for 35 minutes or until all water is absorbed.
2. While rice is cooking: Thinly slice beef into strips. Stir fry over high heat in 1 tablespoon sesame oil. Add 1 can Chinese vegetables and 1 cup cut up fresh broccoli. Sprinkle with soy sauce, ginger, and minced fresh garlic. Simmer for another 5 minutes or so.
Serve immediately with the brown rice.
Makes 4 servings. Leftovers make a great lunch.
