Italian Meatballs

Ingredients

    1 lb. lean ground beef
    1 lb. ground bison
    2/3 c. Italian breadcrumbs
    1/2 c. skim milk
    2 T olive oil

Directions

Makes 10 1/3 c.-sized meatballs
1. Heat the olive oil in a large skillet on medium heat.
2. Fill a teakettle with water and boil. (You need enough water to almost cover the meatballs in the skillet.)
3. In a large bowl, mix the remaining four ingredients together.
4. Scoop some of the mixture into a 1/3 c. measuring cup, then form one ball in your hands. Drop the formed ball into the skillet with oil. Continue making the remaining 9 meatballs, dropping each one in the skillet.
5. Once the meatballs have browned on one side, turn them over with a spatula or tongs, and brown them on their opposite side.
6. When the teakettle boils, and after both sides of the meatballs have browned, fill the skillet with the boiling water until the meatballs are nearly covered.
7. Cover the skillet with a lid and simmer the meatballs on low for 15 minutes.
8. Best practice: drain the water from the skillet and add tomato sauce of your choosing. Let simmer with meatballs for 1-2 hours before serving, so that all the flavors of the sauce and meat can mingle.

Serves ten 1/3 c.-sized meatballs (about 3 oz. each)
