Low Carb Crunchy Cheese Biscotti

Introduction

Cream softened cream cheese, butter and 2 egg yolks.
Add other ingredients...mix well by hand or slow mixer.
Makes 4 logs...about 1.5 x 8-9 inches... pat down on baking sheet to about 2 inches wide and then bake as per instructions.

Ingredients

    Cream Cheese, 4 oz (remove)
    Butter, unsalted, 4 tbsp (remove)
    Cheddar Cheese, 8 oz (remove)
    *Wheat flour, white, bread, enriched, .25 cup (remove)
    Baking Powder, 1 tsp (remove)
    Vital wheat gluten, 10 grams (remove) (1/4 cup)
    *Bob's Red Mill Almond Meal (Flour), 1.25 cup (remove)

Directions

60 pieces ..

Add other ingredients...mix well by hand or slow mixer. I also added in about 1 tbs of Mrs. Dash Basil, tomato, garlic seasoning.
Makes 4 logs...about 1.5 x 8-9 inches... pat down on baking sheet to about 2 inches wide and then bake as per instructions below..

.Bake 325 for about 30-35 minutes until golden. Remove, cool, slice with serrated knife into about 60 total pieces (15 or so per roll).

Place back on cookie sheet and bake again at 225 for 40-45 minutes until dry and golden.

Will keep indefinitely.
