Number of Servings: 8

Ingredients

6 cups raw diced potatoes ,3 cups choped leeks ,1cup choped onion ,2 cups choped carrots,300gms gammom chopped into small cubes with all fat removed ,3 chicken stock cube(oxo)crumble them into about 8 cups of water ,2 bay leafs reamove at end of cooking ,season to taste we like a lot of pepper and a little bit of chile to give it a bit of a kick.

Directions

brown cubed gammon in a large pan,add cubed potato ,cubed carrots, onion, leeks and stir together you just want to start to cook the carots and potatoes a littel bit as it helps before they go in the slowcooker, you may have to add a little water to stop all the ingredients sticking to the pan, when you think the potatoes are just starting to cook pour all whats in the pan into slowcooker add stock, 2 bay leaf and a little bit of seasoning, i try to have every thing choped the night before so all i have to do is brown all the ingredients throw it all in the slow cooker on low and go to work ,and near the end of cooking taste and see if it needs any more ,and remember to take the bay leafs out.i dont add salt to cooking i leave that to the person at the table
