Introduction

Number of Servings: 2

Ingredients

    Mushrooms, fresh, 4 cup, whole or slices (I used 16 oz white button mushrooms)
    Low fat cream cheese, .5 cup
    *Knorr Vegetable Recipe Mix (soup broth), 1 tbsp
    Water, tap, 1 cup (8 fl oz)
    Olive Oil, 2 1tsp
    Pepper, black, .5 tsp
    Marjoram, dried, 1 tsp
    Lemon juice, 1 tbsp (reserve to add at the end)

Directions

In large non-stick skillet, start heating the oil. Rinse off mushrooms (make sure to get any dirt off) and drop in the hot skillet. Be careful because moisture droplets can spatter back on you. Let saute for several minutes, shaking the pan every now and then to make sure they don't stick. When a few have some golden areas and their volume is decreased by about a third, add the water and seasonings **except lemon juice**. Let simmer about 10 minutes or until sauce has thickened and stopped boiling so hard. It should be thickened enough to coat the mushrooms. Take off heat and add lemon juice, whisking it well into the sauce.

Serves 2 as a main dish over whole grain toast or plain brown rice. Use fresh Marjoram if you have it and add some more as garnish.
