1/2 cup onions Chopped or diced
1 cup celery diced
1/2 cup green or red or yellow pepper diced
4 cups diced potates9 about 4-5 large potatoes
1 cup carrots diced
8 cups of water
3 chicken boullion cubes or 3 Tablespoons of Granules
1 pkg. Hillshire farm smoked Sausage diced
2 Tablespoons olive oil
1 cup nonfat milk
1/4 cup corn start or 2-3 large tablespoons.
In the olive oil I saute the oinons, green pepper, while that is cooking I start my water on to boil and add the carrots and then the potatoes and the sausage and the boullion cubes. I bring this to a boil and then turn it down to simmer. When all is tender with a fork, I add the sauted onions, green peppers, and the oil it was cooked in.
I mix the cornstarch and the milk together and add the soup for thickening. You can season to taste. I find the sausage and the boullion cubes usually add enough salt on their own, but you might want pepper. You can add more vegetables like green beans are good added to this soup.
