Ed's Moussaka

Ingredients

    2 eggplant, peeled and sliced thinly
    Olive oil spray
    2 tbs olive oil
    1 onion finely chopped
    3 garlic cloves diced
    1 lbs lean groun lamb
    14 oz chopped plum tomatoes
    1 tsp oregano
    pinch of cinnamon
    salt and pepper to taste
    Topping
    .25 cup butter
    .5 cup plain flour
    2.5 cup milk
    pinch nutmeg
    .75 cup cheddar cheese
    1 egg yolk
    2 tbs bread crumbs


Directions

Serves 4 portions

spray with oil sliced eggplant, bake in a 400 degree oven for approximately 10 minutes each side until golden brown. Arrange half eggplant in slow cooker and set remaining half aside.
Heat olive oil and fry onion gently for about 10 minutes add garlic and lamb and continue to cook until the meat is browned. Stir in tomatoes and spices bring to a boil over gentle heat. Spoon mixture over eggplant in cooker.
Cover mixture with remaining eggplant.
For the topping, melt butter stir in flour and cook for 1 minute. Stir in milk graduallybring to a boil over low heat until thick and creamy. Remove from heat and season with nutmeg and stir in 2/3 cheese. Cover slow cooker and cook for 2 hours on high.
Sprinkle remaining cheese and bread crumbs on topping and put under broiler until browned. leave stand for 10 minutes before serving.
When sauce is cool about 5 minutes stir in egg yolk and pour sauce over eggplant.
