Curry Chicken Salad

Introduction

Number of Servings: 6

Ingredients

    3 chicken breasts, poached and shredded
    1/4 cup light or low fat mayonnaise
    2 tsp prepared yellow mustard
    1 small can pineapple tidbits, with juice
    1/2 cup chopped or sliced almonds
    1 tsp curry powder (or more to taste)
    1/2 tsp ground ginger
    1-2 tbsp chopped fresh parsley
    Salt and pepper to taste

Directions

Poach the chicken breasts until cooked through, shred and allow to cool.

In the meantime, prepare the dressing for the salad by mixing the rest of the ingredients in a big bowl. Toss the chicken with the dressing, adjust the spices to taste, and serve chilled.

This is DELICIOUS served on whole wheat pitas!! Makes about 6 generous portions (enough to fill a pita.)
