3 eggs, beaten
3 T low-fat milk
1/2 t Vanilla extract
4 slices whole grain bread (sprouted grain for more nutrition)
2 T butter
Heat half the butter in a skillet or griddle on medium heat. Dip each slice of bread in the egg mix and cook 2-3 minutes on each side until golden (may cut bread into 4 slices for sticks to dip into topping).
Serve each slice of the French toast with 1 tablespoon Almond Butter Banana Topping for a satisfying low GI breakfast.
