2 1/2 pounds boneless bottom sirloin
1/4 teaspoon salt
1 pound small white or pearl onions
1 pound baby carrots
1 pound small red new potatoes
3 ribs celery, cut into 2" long pieces
2 cups reduced sodium chicken broth
Arrange the onions in the bottom of a 4-quart or larger slow cooker. Place beef on top. Add carrots, potatoes, celery and broth.
Cover and cook on low 6 to 7 ours, or until fork-tender.
