Chicken Leek and Wild Rice Soup

Number of Servings: 8

Ingredients

    I leek, medium, chopped - white and green
    3 carrots, washed and chopped
    3 celery stalks [I use 6 upper portions with leaves]
    1/2 cup brown rice, uncooked
    1/2 cup wild rice, uncooked
    2 ounce jar chopped pimento
    1.2 pounds of raw chicken breast, cut into bite-size cubes
    1 32-ounce carton [4 cups] chicken broth
    4 cups filtered water
    * Spices as preferred:
    1 tsp. dried basil
    3 bay leaves
    1 tsp. dried rosemary
    1 tsp. minced garlic
    1 tsp. black pepper


Directions

Makes 8 servings
Layer chopped vegetables, rices, pimentos, chicken cubes in 6 quart crock pot. Add broth, water and spices. Stir.
Cook about 2 hours on high; reduce to low and cook another 6 hours.
