Introduction

This is a recipe from my husbands grandfather. He is a wonderful man and a awesome cook. I have never liked meatloaf till I ate this and I was hooked. This is a recipe from my husbands grandfather. He is a wonderful man and a awesome cook. I have never liked meatloaf till I ate this and I was hooked.
Number of Servings: 12

Ingredients

    36 oz of meat (beef or turkey) I used beef so if you use turkey it will change stats a little.
    2Tbsp pepper
    2tbsp salt
    2 garlic cloves (minced)
    around 1 cup ketchup (divided in to 1/2 cups)
    2 cups cheddar shredded
    2 large eggs
    1 cup diced celery
    1 large bell pepper diced
    1 med. onion diced

Directions

Mix all ingredients together, reserving 1/2 cup of ketchup for top. Form into a loaf and top with remaining 1/2 cup of ketchup. cover with foil and place in oven for 2-2 1/2 hours. The last 20-30 minutes uncover and let brown. This makes at least 12 slices for normal appetites and if you are a WLS person as I am it will last a year ( it will seem that way) could be frozen if wanted.
