Mushroom Gravy, Gluten Free, to accompany Comfort Meatloaf

Introduction

This is the gravy recipe that goes along with my gluten free "Comfort Meatloaf." Again... this is *comfort food* NOT diet food. You can really use any combination of flour and starch, but this is my favorite combo. This is the gravy recipe that goes along with my gluten free "Comfort Meatloaf." Ingredients

    1 1/2 C Water (can I count that toward my 8 glasses?!) lol
    1/2 C Pan drippings from meatloaf
    1/4 C White rice flour
    1 T Potato starch
    4 large mushrooms

Directions

Stir, scrape and whisk the pan after meatloaf is done to gather up meat drippings. The main difference here is that we are going to pour it into a measuring cup till we have the amount needed and get rid of the rest! (If you don't have enough to make 1/2 cup, you can add butter or shortening to make up the difference). Put the 1/2 cup of drippings in a saucepan and warm over medium heat. Gradually whisk in the flour and starch just until smooth. Add the sliced mushrooms and cook, stirring constantly, until mixture is slightly browned, 4 to 5 minutes. Slowly stir in water and cook, stirring until thickened. season with salt and pepper to taste, if desired.
