Spicy Chickpeas in a Crock Pot

Introduction

Great Middle Eastern taste. Can be a main course or a side dish to some kind of meat. Very forgiving recipe--add different beans, play with the spices, do whatever. Serving size is about 1 cup. Ingredients

    1 T olive oil
    2 onions, peeled and finely chopped
    4 garlic cloves, finely chopped
    2 T minced fresh ginger root
    2 tsp ground coriander
    1 tsp cumin seeds
    1 tsp salt
    1/2 tsp black pepper
    1/2 tsp cayenne pepper (reduce if too spicy for your taste)
    2 tsp balsamic vinegar
    2 cups coarsely chopped tomatoes (canned or fresh)
    2 (19 oz) cans chickpeas, drained and rinsed

Directions

Saute onions over medium heat until just starting to brown. Add everything except chickpeas and bring to a boil. Transfer to crockpot and add chickpeas. Cook on LOW 6-8 hours or HIGH 3-4 hours. Serve with hot naan or pita bread.
