Wisconsin potato cheese soup, lowfat


Number of Servings: 6


    1 TB butter
    1/4 C onions, chopped
    4 C potatoes, chopped
    3 C lowfat, low sodium chicken broth
    2 C nonfat milk
    2 C lowfat colby or cheddar shredded cheese


Saute onions in butter. Add potatoes and broth. Boil until potatoes cooked. Add milk and heat. Season with dashes of pepper, salt, onion salt, onion powder. Add cheese and cook until cheese is melted.
