Squash, Sweet Potato & Spinach Risotto

Introduction

Can be made with a variety of vegetables - this one was made with squash, sweet potato and spinach Can be made with a variety of vegetables - this one was made with squash, sweet potato and spinach
Number of Servings: 6

Ingredients

    Arborio Rice
    Olive Oil
    Garlic
    White Wine
    Chicken and/or Vegetable Broth
    Squash, cubed
    Sweet Potato, cubed
    Spinach
    Spices
    Parmesan Cheese

Directions

Saute garlic in olive oil
Mix in rice and toast for 5 minutes
Add Wine, let simmer until it is absorbed
Add Vegetables
Add Broth, one cup at a time, letting each cup absorb before adding the next
Keep stirring rice to keep from sticking
Add spices
Mix in Cheese before serving.

Makes 6 servings
