Szechuan Barbecue Pork and Vegetables

Introduction

Number of Servings: 4

Ingredients

    1/2 cup Hunt's Original Barbecue Sauce
    3 tablespoons honey
    2 tablespoons La Choy Lite Soy Sauce
    1/4 teaspoon crushed red pepper
    PAM Original No-Stick Cooking Spray
    2 cups baby carrots
    1 1/2 cups fresh pea pods
    hot cooked brown rice, (optional)

Directions

Combine barbecue sauce, honey, soy sauce and
crushed red pepper; set aside.

Spray large nonstick skillet or wok with cooking spray.

Heat over medium heat. Add pork; cook 4 to 6 minutes, or just until no longer pink outside, stirring occasionally.

Add barbecue sauce mixture and carrots; cook
10 minutes, stirring occasionally.

Add pea pods; cook 2 minutes, or until pea pods are bright green and mixture is heated through, stirring occasionally.

Serve over hot cooked rice, if desired.

  • Although the calorie count is totally wrong, and no pork is included in the list of ingredients, the sauce is really very good. I had no carrots, so I substituted 1 cup of sliced onions. - 9/30/07
