Chicken Stir Fry

Ingredients

    2 chicken breasts, skinless, cut into small strips
    1 tbsb olive oil
    2 small to medium carrots, thin sliced
    2 cups sliced cabbage
    1 cup spinach
    1 tsp thyme, dried
    salt to taste
    pepper to taste
    2 tbsp Tamari (gluten free soy sauce)

Directions

Heat olive oil over high heat, saute chicken strips and carrots. Add salt, pepper and thyme, cook chicken till done. Reduce heat to a simmer and add cabbage and tamari. Cover and simmer for 5 to 10 minutes until cabbage is tender and add spinach, simmer for about 2 minutes. Serve as is or over rice. (rice is not in the nutrional info)
