1 pound cooked chicken breast, shredded into small pieces
1 large onion, diced
4 cloves garlic, minced
1 can (7 ounces) chopped green chiles
.5 cup fresh cilantro, chopped fine
4 cups chicken broth
1 tbsp olive oil
3-4 cans Great Northern Beans (drained and rinsed)
1 tbsp. cumin
1 tbsp. chili powder
1 tsp. cayenne powder
*1 cup Monterey Jack cheese
*1 cup Pepper Jack cheese
Add Chicken broth and beans. Season with chili powder, cumin, and cayenne powder. Salt and pepper to taste. Let simmer for 45 minutes -1 hour until flavors are combined. *Serve with cheeses and extra cilantro.
