Egg cups

Introduction

These are simple breakfast items to make. Super easy, yummy and nutritious. Easy to modify with other veggies or meats. These are simple breakfast items to make. Super easy, yummy and nutritious. Easy to modify with other veggies or meats.
Number of Servings: 6

Ingredients

    1.5 cups of egg beaters
    4 slices cooked bacon, crumbled
    .30 cups of 2% mexican blend cheese
    2 small baked potatoes (chopped) (I Used leftover potatoes from the night before).
    .50 cups of frozen spinach, cooked
    2 tsp. chopped onion (I prefer green onion)
    salt and pepper to taste

Directions

Preheat the oven to 375 degrees.
Chop the potatoes into a bowl, crumble the bacon, add the eggbeaters, cheese, onion and cheese and mix together.
Spray 6 muffin tins with PAM (for non stick) and divide mixture into the 6 cups. Bake for 20-25 minutes until the egg is puffed up and cooked all the way through
