Raw Frozen Banana Cream pie

Introduction

This is a twist off of Ani Phyo's Pineapple Icebox Dessert I used Banana instead as I love bananas. If you are a banana lover you will definitely love this treat. Ingredients

    Crust:

    2C Raw Cashews
    1Tbs Non-Alcoholic Vanilla Extract or Seeds from 1 Vanilla Bean
    2Tbs of Raw Agave

    Filling:
    1 1/2c of Raw Cashews
    1/3c of Raw Agave
    1/4c Coconut Oil
    1/4c Filtered Water
    1 Med. Banana
    2 Med. Chopped Bananas

Directions

Place all Crust ingredients in a Food Processor and chop to a crushed wafer texture. Sprinkle half of the crust onto the bottom of a loaf pan.

Filling:

Blend Cashews, Coconut Oil, Agave, 1 banana to a smooth consistency add water as needed to get a creamy consistency.

Spoon the mixture in a bowl and add the 2 chopped bananas and stir to mix well. Spoon the filling into the prepared loaf pan and sprinkle the remaining crust on top.

Pat Lightly, freeze for 2-3 hours or until chilled. I left it over night.

Will keep for 4-6 days in the fridge and several weeks in the freezer.

  • This recipe is awesome! Super simple to put together. It is healthy for you but at the same time is decadent. Made it to bring to a dinner party and everyone loved it. When I told them it was part of my Raw Food Diet and it was 100% Raw they were speechless. - 1/24/11
