Ingredients

    Whole Wheat Flour
    Ground Oats (I ground them in the coffee grinder)
    Baking Powder
    Ground Walnuts
    Ground Almonds
    Baking soda
    Soy milk (light)
    Baked Sweet Potato
    Apple Butter
    Egg
    Egg whites

Directions

Mix Whole wheat flour, ground oats, baking powder, ground nuts and baking soda together in a bowl.

In blender, mix soy milk, brown sugar, sweet potato, egg and egg whites, and apple butter.

Pour milk mixture into flour mixture, and mix with fork. Cook in frying pan or griddle, lightly sprayed with pam.

I used 1/3 measuring cup for each pancake.

Makes 22 pancakes.
