Mini Banana Walnut Muffins

Introduction

Number of Servings: 30

Ingredients

    1 1/4 C flour
    1/2 C whole wheat flour
    2 tsp baking powder
    1/4 tsp salt
    1/2 C milk
    3/4 C mashed bananas
    1 egg, beaten
    1/4 C canola oil
    1/2 C chopped walnuts

Directions

Preheat oven to 350*. Mix dry ingredients in mixing bowl. Combine wet ingredients, then add to dry ingredients. Mix throroughly. Fold in walnuts. Spray muffin pan with non-stick cooking spray. Fill Mini-Muffin cups 3/4 full. Bake 15 minutes. Makes 30 mini muffins. Enjoy.
