Chipotle Chicken

Ingredients

    4 boneless skinless chicken breast (remove fat)
    1 onion, sliced
    1-2 chipotle peppers, (depends on how spicy you want it)
    1 tbsp Adobe sauce
    1 medium can tomato juice
    2 tbsp oil

Directions

Cook chicken in boiling pot of water. When done, drain & shred chicken. Cook sliced onions in 2 tbsp oil until golden & tender. In blender, blend chipotle peppers, adobe sauce and 1/2 can tomato juice. Add mixture in pot with chicken & add the rest of the tomato juice. serve. I usually serve mine with black or refried beans. makes 4-6 1/2 cup servings
